A cozy, make-ahead meal that’s full of flavor and perfect for feeding a crowd — we use whatever meat and peppers we have on hand.
Ingredients
- 4 cups cubed, cooked pork or chicken
- 1 pint salsa
- 2 cups chopped peppers (any kind you like)
- Tortillas
- 1 large can enchilada sauce
- Shredded cheese
- Melted butter (for brushing)
- Salt, pepper, and any other favorite seasonings
Instructions
- In a skillet or pot, combine the cooked pork or chicken with the salsa and chopped peppers.
- Season with salt, pepper, and anything else you love — cumin, chili powder, or garlic work great.
- Simmer the mixture until most of the liquid has cooked out.
- Spoon about ½–¾ cup of the meat mixture into each tortilla. Roll them up and lay seam-side down in a greased 9×13 baking dish.
- Brush the tops of the tortillas with melted butter.
- Bake at 350°F for about 10–15 minutes, or until the tops are slightly crispy.
- Remove from the oven, pour enchilada sauce over the top, and add as much shredded cheese as your heart desires.
- Return to the oven and bake until the cheese is melted and bubbly — about 15 minutes.
- Let rest for a few minutes, then serve warm!
