Enchiladas

A cozy, make-ahead meal that’s full of flavor and perfect for feeding a crowd — we use whatever meat and peppers we have on hand.

Ingredients

  • 4 cups cubed, cooked pork or chicken
  • 1 pint salsa
  • 2 cups chopped peppers (any kind you like)
  • Tortillas
  • 1 large can enchilada sauce
  • Shredded cheese
  • Melted butter (for brushing)
  • Salt, pepper, and any other favorite seasonings

Instructions

  1. In a skillet or pot, combine the cooked pork or chicken with the salsa and chopped peppers.
  2. Season with salt, pepper, and anything else you love — cumin, chili powder, or garlic work great.
  3. Simmer the mixture until most of the liquid has cooked out.
  4. Spoon about ½–¾ cup of the meat mixture into each tortilla. Roll them up and lay seam-side down in a greased 9×13 baking dish.
  5. Brush the tops of the tortillas with melted butter.
  6. Bake at 350°F for about 10–15 minutes, or until the tops are slightly crispy.
  7. Remove from the oven, pour enchilada sauce over the top, and add as much shredded cheese as your heart desires.
  8. Return to the oven and bake until the cheese is melted and bubbly — about 15 minutes.
  9. Let rest for a few minutes, then serve warm!
